I don’t know about you, but I can’t eat another thing. But Holy Heart Attack, did I have some good cookies these last few days.
This recipe was recently passed through the females in my family, and I decided to try it for the first time. It’s super simple and tastes like it was bought in a candy shop:
2 sticks butter
3/4 c. brown sugar
Plain Graham Crackers
12 oz. semi-sweet chocolate chips
1-2 c. chopped nuts (pecans, walnuts, or peanuts work well)
Preheat over to 350 degrees. Line a cookie sheet with foil, then line with graham crackers. Heat butter and sugar in a sauce pan until bubbly and frothy. Pour over graham crackers, using a spatula to spread evenly. Bake for 8 minutes.
Remove from oven pour chocolate chips over graham crackers, smoothing the melted chocolate evenly with a spatula. Sprinkle on nuts, press into chocolate. Refrigerate until hardened; break into bite-sized pieces to serve.
I tried another recipe that my mom has been making since I was a wee one, but one that I had never actually tried myself. Another super simple, no-bake recipe, these are as visually appealing (and cute!) as they are tasty.
These were my brother’s absolute favorite, so my mom always had to make a double batch. Because of the green food coloring, my brother always said it wasn’t really Christmas until he pooped green. In fact, he would herald the First Green Poop as if he announcing the arrival of the Queen of England.
There’s one in every family.
Marshmallow Wreath Cookies
1 stick butter
30 lg. marshmallows
1 tsp. vanilla
2 tsp. green food coloring
4 c. cornflakes
Red hot candies or colored M&Ms
In a saucepan melt butter and marshmallows, stirring frequently. Add vanilla and food coloring. Pour mixture over cornflakes and stir well. Drop by spoonful onto waxed paper. While cookie wreaths are hot, decorate with red hots or M&Ms. Let dry completely overnight or pop in the fridge for 20 minutes, then gently peel and turn, allowing the other sides to dry. Store in air-tight container.
